Gather over dishes like salsicce arrosto – wood fire oven baked skinless pork and fennel sausages in red wine – or savour the taste of mains such as Guanciale Di Manzo with beef cheeks slow cooked for six hours with red wine, red capsicum, porcini, button mushrooms and polenta.
